Pasitsada favourite Corfiot traditional food

Pasitsada

Ingredients - 3-4 cloves garlic, peeled and finely sliced. 20 gr. butter. 4-5 onions, finely sliced. Half teaspoon ground cinnamon. Quarter teaspoon cloves. 2 tablespoons tomato puree, diluted in a little hot water. Salt and black pepper. 3 tablespoons red wine vinegar. 1.75 kg piece of top rump, or rolled brisket. 4 tablespoons olive oil. 500 gr. spaghetti.

Bordetto

Ingredients - 3 pounds fish - preferably grey mullet or sea bream. 1 pound onions finely chopped. 1 cup olive oil. 3 cloves garlic finely chopped. 2 tbsps tomato paste diluted with 1 cup water. 1 tbsp paprika or cayenne pepper. Half tsp freshly ground black pepper. 1 pound small stewing onions. 1 pound potatoes sliced in thin rounds. 2 tsps chopped parsley. Salt to taste.

Traditional Moussaka Corfu Recipe

Moussaka

Ingredients - 4 or 5 aubergines, 4 or 5 potatoes (boiled and sliced), 1/2 kilo minced meat, 2 or 3 ripe tomatoes (or 1 tin chopped tomatoes), 1 teacup olive oil, 2 medium onions finely chopped, 1 bay leaf, 1 clove of garlic, a pinch of dried oregano, 1/2 teaspoon or one stick of cinnamon, 1/2 cup grated cheese, bechamel sauce, salt and pepper.

Sofrito

Ingredients - 1.5 kg of round steak, thinly sliced. 4 cloves of garlic, chopped. 1 shot glass of vinegar. 1 shot glass of dry white wine. 1 bunch of fresh parsley, chopped (leaves and tender stems). 1 stalk of rosemary with leaves. 1 teaspoon of salt. 1 teaspoon of freshly ground black pepper. 2 tablespoons of olive oil. Olive oil for frying. Flour for dredging.
